Diabetic Patterns and Meal Plans
I really enjoyed this project and learned so much about what goes into creating diets for diabetics of all types. I first created six different diabetic patterns with varying amounts of calories and diet restrictions. Each diet had to be within 25 calories of the stated goal with a minimum of 25% calories from fat. I then created meal plans to meet the criteria of three out of the six diabetic patterns. It made me confident in using exchanges, balancing carbohydrates, and in my ability to translate the patterns into actual diets. Although calculating and balancing all of the carbohydrates while staying within appropriate macronutrient distribution and calorie ranges was tricky, it became a fun process; like figuring out a puzzle. I also learned how difficult it would be to come up with weeks of varied diets based on the same pattern.

The second part of the assignment was to write two days of a diabetic pattern of our choice. I love milk and decided the most challenging experience would be for me to follow the 1800 calorie lactose intolerant. It was a very eye-opening experience and I wrote a summary about the difficulties I faced during those two days (which were very abundant). The most important lesson I learned was to be much more empathetic to diabetics who have to follow such rigid diet every day. It also made me want to be their advocate and become more experienced in writing diets so that their quality of life and relationship with food can a positive one.
I also compared the grams of carbohydrates I calculated from using exchanges versus ESHA. It was good to be aware of both methods of calculating grams of carbohydrates and the discrepancies that can arise between them depending on the food.
